The Tarte Flambé
The Flammkuchen comes from France- Alsace, where it is also called Tarte Flambé, or near the border area Flammekueche.
Originally thinly rolled out dough was placed in the oven to test the temperature of the stones before inserting bread in the wood oven.
If the dough got burnt quickly, the temperature to bake bread was too high, and you had to wait until the stone cooled off.
While waiting a simple snack was created, first only with sour cream, later garnished with onions and bacon.
This was the birth of Flammkuchen!
The flames have to circulate over the Flammkuchen to achieve the distinctive flavor!
