This diagram clearly shows that there are always more flames in the centre of the wood-burning oven than on the outer sides. This is due to the fact that the flames always move in the direction of the oven pipe, which is located in the centre of all wood-burning ovens as standard.
Where the flames are directed, the fireclay of the ceiling is heated significantly more than at the points with fewer flames.
In an oven with a straight top, this phenomenon is not taken into account, as the distance between the top heat and the baked goods is the same everywhere.
This in turn leads to different baking results during baking.
This is not the case with our old German wood-fired oven. The distance to the vault regulates the different heats in the wood-fired oven so that the baked goods receive absolutely even heat. This achieves more even baking results without turning the baked goods.
The curved shape allows us to utilise the natural properties of fire and heat.
Another advantage is that you do not have to leave this oven standing. Due to the different fireclay bricks in combination with the fireclay vault, the temperature in the wood-fired oven is almost uniform after firing up. All you have to do is cool down the base bricks and start baking. This saves a lot of time!
Ramster storage stove Gotthard Type 3
The two-part door of the Gotthard type 3 allows uninterrupted baking by the blazing fire. Here you can bake like in a Neapolitan pizzeria. Move the fire to the left, close the left door and bake on the right. This allows the heat above the pizza to escape and provides an additional browning effect. If the base temperature drops after a while, move the entire fire to the right, add two logs, close the right-hand door and bake on the left-hand side.
This method allows you to bake pizzas for up to 20 hours without interruption over a blazing fire.
The Gotthard type 3 is ready to conjure up a wide variety of dishes over many hours with falling heat after initial heating and subsequent standing. Thanks to its large baking compartment and the solid bread baking vault with high and long-lasting heat storage, it maintains an even temperature throughout the oven after firing.
