Why a vaulted ceiling is better than a straight ceiling is simply illustrated here.

This diagram clearly shows that there are always more flames in the centre of the wood-burning oven than on the outer sides. This is due to the fact that the flames always move in the direction of the oven pipe, which is located in the centre of all wood-burning ovens as standard.
Where the flames are directed, the fireclay of the ceiling is heated significantly more than at the points with fewer flames.
In an oven with a straight top, this phenomenon is not taken into account, as the distance between the top heat and the baked goods is the same everywhere.
This in turn leads to different baking results during baking.
This is not the case with our old German wood-fired oven. The distance to the vault regulates the different heats in the wood-fired oven so that the baked goods receive absolutely even heat. This achieves more even baking results without turning the baked goods.
The curved shape allows us to utilise the natural properties of fire and heat.
Another advantage is that you do not have to leave this oven standing. Due to the different fireclay bricks in combination with the fireclay vault, the temperature in the wood-fired oven is almost uniform after firing up. All you have to do is cool down the base bricks and start baking. This saves a lot of time!
Why a Ramster oven?
The vaulted shape of the fireclay top heat allows you to achieve a baking result that will also impress you. Just like our grandmothers when they baked the best bread, the vault technology of a RAMSTER oven completely eliminates the otherwise difficult handling of top and bottom heat (which is unfortunately necessary with many other ovens).
Doesn't the vault shape of the top heat lead to different heat development in the oven?
No, quite the opposite. As the heat and flames in the oven's firebox are always concentrated in the centre, this should naturally also be the highest point of the baking chamber.
An example: Everyone knows the flame pattern in the living room fireplace. Where is the heat greatest / where are the most flames? No, not at the edges, but always in the centre of the firebox. This is the reason why we install vaults in our wood-burning ovens. For a better understanding, we have attached a photo of a typical flame pattern in a wood-fired oven. Here you can best see that the heat is greatest in the centre. That's why we build our ovens with vaults.
Why does baking with a vaulted oven lead to better results?
Quite simply, we have perfected the vault of our wood-fired oven so that it is even more versatile than the original Old German wood-fired oven.
Baking in an Old German wood-fired oven with a vault shape / rack oven leads to exceptional baking results.
Where the heat of the fire was the strongest, the distance between the bread, meat, etc. and the top heat is also the greatest. This means you can achieve more even baking results than in almost any other oven.
Do the baked goods in the Ramster ovens have to be turned because of the vaults?
As already described, our vaults achieve the best, most even results. It is therefore not absolutely necessary to turn your baked goods.
Why are these types of old German ovens built in the first place, despite the high cost?
