Recipe recommendation:
1kg pizza flour, 550ml water, 30g olive oil, 2-20g yeast (depending on the dough), 24g salt Knead the ingredients until the dough comes away easily from the flour pan. Shape the dough into a thick roll (approx. 2.5kg) and divide into 10 pieces using a dough cutter. Shape the dough into 10 balls (pizza balls). Short dough proofing 20g yeast: Leave the dough to rise for 90 minutes. Then shape and fill. Thomas tip: Long dough method 2g yeast: Completely oil a pizza ball box with olive oil. Spread the pizza balls generously in the box. Close the box and place in the cellar. The pizza balls can remain in the cellar for up to 3 days. Moulding and topping: Shape the pizza ball by hand up to 1 cm from the edge. Then leave the round dough to rest for another 3 minutes and then shape it to the desired size. Top the pizza first with the sauce, then with the cheese and finally with the desired toppings.
